The "Orogiallo" pasta factory in the early 1970s was a small artisan pasta workshop, owned by the Milito family, with the aim of creating high quality fresh pasta that blended all the flavor and wisdom of traditional craftsmanship. It quickly consolidated in the high gastronomy sector, becoming one of the most popular fresh pasta in Italy.
Trofie are a short twisted traditionally fresh pasta from the north-western Italian region of Liguria. Trofie are probably the number one choice for pesto, especially green leaf pesto such as basil or rocket because the sauce gets into the spirals, ensuring that each mouthful is truely flavourful! In fact, this pasta comes from the same region as basil pesto Genovese, the most well known of all pesto sauces.
