Making a Neapolitan frozen artisanal pizza is the goal of iSalvo. The underlying idea is to rethink this product's consumption pattern, in order to dignify the frozen, "ready-to-cook" pizza and to win the reluctance of buyers towards it.
The dough, made with a blend of ad hoc flours, is inspired by the Neapolitan tradition, it is only modified in an attempt to make it suitable for the particular processing process; then it is cooked in a wood owen and finally chilled.
24 hours of room-temperature leavening, no fat, and 60% hydration: these are the cornerstones of iSalvo pizza.
